Pimp My Soup – how to prepare herbal soup packs

Soup packs are a healthful way to add that little bit extra to your soup stocks. Our hot suggestion is to use a leftover whole chicken, or you can start with a full chicken and make delicious chicken soup from scratch. Follow Lj’s recipe for that HERE.

Instructions

  1. Get a soup pack. We are biased, and think you should order one from us.

  2. Tip the contents of your soup pack into a stainless steel pot and cover in water, allowing the herbs to soak for approx. 20 minutes.

  3. What’s that? You want to really pimp it? Well. In that case – you will also need a whole chicken, or at least a chicken frame (our fancy way to say carcass). Throw that in the pot, with 1-2 chopped up onions, carrots, celery tops, sliced fresh ginger – anything goes.

  4. Bring to the boil, partially cover and simmer for a minimum of 40 mins and up to two hours for chicken bones. What?! That’s such a broad time frame! It’s true. We are loose with our times because we primarily work on taste, and sucking out as much of the active goodies in the herbs and bones as we possibly can.

  5. Strain and you have a delicious stock ready to use as a base for soups, stews, stir fries and beyond!
